[Primary Function]
Develop food products and processes that successfully meet the needs of
the customer.
[Responsibilities and Tasks]
The Project Leader/Culinary will participate in and/or lead product
development projects that, in general, are of larger scale and higher
complexity. Duties include but are not limited to:
- Applies a high level of creative and innovative skills to
outside the box' development.
- Development of bench top prototype products which will require
utilizing skills in formulation, flavor profiling, labeling,
specification development, sensory evaluation,and culinary development
among others.
- Heavy interaction with internal and external customers, including
presenting new products and applications, often at customer location
through formal, stand-up presentations.
- Effectively interacts with other departments & organizations such
as QA, Operations, Sales, Marketing, USDA, Product Management, Suppliers
and Customers.
- Adjusts prototypes in accordance with written and verbal instructions
or feedback.
- Assists in process development for commercialization of new products.
- Develops and maintains an organized documentation process.
- Directs lab technician activities as required within the scope of the
project.
- Plans, organizes, prioritizes and assigns activities in order to meet
project deadlines.
- Oversees commercialization of products developed.
SUPERVISORY RESPONSIBILITIES
- Directs lab technician activities as required within the scope of the
project.
- Coaches and mentors Food Technologists and Scientists.
[Minimum Skill Levels and Work Experience]
- Bachelor of Science - Culinary Arts AND Food Science
- 3 - 5 years relevant experience in related field of product
development including strong emphasis on culinary development
(Culinologist).
- Demonstrated strong customer service orientation
- Demonstrated ability with conducting product formulations
- Demonstrated capability to work in fast-paced, high-energy working
environment.
- Demonstrated aggressiveness/self-confidence in performing job
responsibilities.
- Demonstrated ability to function effectively with people in many
different roles/capacities: technical and non-technical, R&D and
non-R&D, Company personnel (including but not limited to executives,
Sales, Production, etc) and non-company personnel (including but not
limited to suppliers, customers, prospective customers, etc).
- Demonstrated ability to conduct interactions with a minimum of
conflict.
- Demonstrated ability to assess requests posed to R&D, and evaluate
each appropriately before committing to deadlines, product development,
etc. Demonstrated ability to consult with manager as required in making
this assessment.
- Demonstrated ability to learn new processes quickly (including but not
limited to plant equipment and capabilities, breading & battering,
portioning, par-frying, etc)
- Demonstrated ability in making customer presentations, to not only
prepare foods but to also explain the foods' product features in meeting
customer requirements.
- Intermediate computer skills (email, internet, MS Word, MS Powerpoint,
etc)
- Excellent written and verbal communication skills.
- High level of interpersonal skills.
[Preferred Skill Levels and Work Experience]
- Masters in Culinary Arts AND Food Science
- CSC (Certified Sous Chef) or higher certification by the American
Culinary Federation
- CRS (Certified Research Chef) or higher certification by the Research
Chefs Association
